Here at Oaktrack we love preserving. Not only does it cut down on food miles and reduce food wastage, but it allows you to capture each season at its best, making use of the seasonal abundance to create your own unique chutneys, relishes, pickles, jams and jellies and experiment with new flavour combinations.
Whether you are bottling, jarring, pickling or jamming it really is quite simple. Choose the best of what’s available, make sure all pieces are cut to roughly the same size so they cook evenly, and providing you get the basic ratios of vegetables to vinegar and fruit to sugar, you can vary the recipes to please yourself. Once you’ve learnt these basic skills you can pass them on to the next generation – after all, this has been an activity which has been going on for years so long may it continue!
Somehow, there is nothing quite as satisfying as opening up a jar of homemade chutney bursting with flavour and transforming a piece of cheese or cold meat; perking up a pork pie or adding a little to curries, soups and stews.
